Community Cuisine is a collaborative culinary initiative designed to bridge the gap between the classroom and the community. By pairing the expertise of French culinary arts with the volunteer spirit of University of Minnesota Duluth (UMD) students, we transform local kitchens into vibrant hubs of cultural exchange, skill-building, and mutual discovery. At its heart, this project is about connection through craft. While French cuisine provides the technical framework, focusing on precision, patience, and the celebration of ingredients, the true "secret sauce" is the diversity of the people around the prep table. We believe that by learning a sophisticated new skill together, residents from all walks of life can find common ground.

Community Cuisine

Soundscapes

Soundscapes is a collaborative sensory project between Betsy Hunt’s digital art students at UMD and the DCWC. By stepping out of the studio and into the heart of the Nourish program’s kitchen, students moved beyond visual storytelling to explore the power of deep listening as a tool for community connection. Students captured the lived experience of our local food justice work. Armed with recording equipment, they navigated the bustling, high-energy environment of a working community kitchen to build a sound archive. These recordings were then woven into digital sound collages and audio artifacts that represent the labor, love, and logic behind the Nourish program. Listen here!

DCWC Nourish

Nourish is a community-powered social enterprise dedicated to making healthy, fresh food accessible and affordable for the residents of Duluth’s Central Hillside. More than just a meal delivery service, Nourish is a human-centered food system designed to break generational patterns of poverty and food insecurity through nutrition, education, and economic empowerment. Duluth Community Garden Program

Cultivating healthy neighborhoods by providing access to land, resources, and community. Established in 1977, the Duluth Community Garden Program is a pillar of urban agriculture in Duluth, dedicated to making gardening financially and physically accessible to every resident. What began as a grassroots effort to transform vacant lots in the Central Hillside has blossomed into a city-wide network of over 20 garden sites and 250+ organic plots. At its heart, DCGP is a food justice initiative. Over 70% of our gardeners identify as low-income, utilizing their plots to supplement their families' diets with fresh, nutritious produce. Community Immersion

The Community Immersion and Entrepreneurship honors course at UMD is a transformative educational experience that breaks down the walls between the university and the Twin Ports community. This course is designed for students who are ready to move beyond the classroom to confront the real-world complexities of poverty and food insecurity. Through a long-term partnership with the Nourish initiative in Duluth’s Central Hillside, students don't just study social issues-- they work alongside community leaders to solve them.
